Performance Plate Pasta Salad

MAPLE DIJON BALSAMIC PASTA SALAD

RECIPE ⬇️ 

Salad Ingredients: 

– 8 oz uncooked pasta of choice 

– 1/2 cup chopped celery 

– 1 cup sliced sweet cherry tomatoes 

– 1/2 cup chopped red onion 

– 1 cup sliced mini or teeny tiny cucumbers 

– 1 lb protein of choice or 1 can beans

– mozzarella pearls ( optional) 

Maple Dijon Balsamic Dressing (be sure to BLEND the ingredients together to help the oil not separate): 

– 1/3 cup extra virgin olive oil 

– 1/3 cup high quality balsamic vinegar 

– 3 tbsp pure maple syrup 

– 2 tbsp whole grain dijon mustard 

– 1 tbsp minced garlic (or 1 tsp garlic powder) 

– sea salt and pepper 

⇢ Instructions: 

1. Cook & drain the pasta, then rinse pasta with cold water to cool. 

2. Prepare protein of choice. 

2. Add to a large bowl with the veggies and then add the dressing and toss well.

3. Let it sit in the fridge for a bit before eating! Stays good for about 5 days.
